Recipe Ingredients:

  • 2 large tomatoes
  • half green bell pepper
  • half a large Dutch cucumber
  • 1 head of red onion
  • 100 grams of fresh Bulgarian white cheese (can be feta)
  • Salt
  • extra virgin olive oil or normal oil
  • vinegar (optional)
  • black olives
  • parsley




Recipe Instructions: We wash all the vegetables well and as you can see in the photos on the next page we cut them all. First dice the tomatoes and put them in a bowl. Cut the cucumber into slices cut in half and add it to the tomatoes. Cut the pepper into small strips and add it to the bowl. Cut the onion into small strips as in the photo and add it to the rest of the cut vegetables. Cut the parsley, add to the bowl, salt, pour olive oil and mix.




Grate the white cheese directly into the bowl that already contains the vegetables. Add the olives and serve like this. We can mix directly before putting in smaller dishes. We can serve as a salad with the second course. In the recipe I did not mention the amount of oil, salt, vinegar or olives to add, because we add these products to our liking.




As a curiosity I would like to add that in Bulgaria, many times this and many salads are served before the main course or dinner with a glass of rakia. Maybe explain to the uninitiated that rakia is Bulgarian homemade alcohol similar to hard liquor (very good), which is made from fruits such as grapes or plums.
